That’s why I vibe more with street food, early in the morning when the streets are still chill, or later in the evening. For me, the morning must-have is vadas, these crispy, salty donut-like delights, served with sambar, a fragrant soup, and coconut chutney. Now, my friend Bhumi is all about pani puri, this quirky snack with crunchy spheres that you crack open and fill with finely chopped onions, tomatoes, chickpeas, sweet-salty chutney, and spicy juice.
